Pizza Recipe ⤞ Lazy Girl Pizza Margherita

Not a gourmet pizza by any means, but it's a quick and tasty snack or light lunch.

Ingredients

  • 2 pocketless Greek pita breads
  • ¼ cup basil pesto
  • 1 cup shredded mozzarella cheese
  • 2 Roma tomatoes, sliced

Cooking Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place pita breads on a baking sheet.
  3. Bake in the preheated oven until lightly browned and slightly crisp, 8 to 10 minutes.
  4. Spread pesto onto each pita bread and top with mozzarella cheese and tomato slices.
  5. Bake in the oven until cheese is melted and tomatoes are tender, about 10 minutes more.
I find the Greek pitas to be a good size and thickness for personal-size snack pizza, but any sort of flat bread with a bit of thickness (e.g. naan bread) will do. Or you can use actual pizza crust.
