Grandma's Porcupine Meatballs in the Instant Pot®

Ingredients

  • 1 pound ground beef
  • ½ cup uncooked white rice
  • 1 small onion, finely chopped
  • 1 egg
  • 1 teaspoon diced garlic
  • salt and ground black pepper to taste
  • 2 (10.75 ounce) cans condensed tomato soup
  • ½ cup water

Cooking Directions

  1. Mix beef, rice, onion, egg, garlic, salt, and pepper in a bowl until combined. Divide mixture into 8 equal portions and form into meatballs.
  2. Place meatballs in a multi-functional pressure cooker (such as Instant Pot®). Mix tomato soup and water and pour over meatballs.
  3. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  4. Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
